If you have serious amounts can I suggest you make a soup? I was making a dill sauce on the weekend that somehow turned into the consistency of soup but it was just amazing - and perfect for hot nights. In a blender put peeled chopped cucumber, yoghurt, sour cream, chopped dill, lemon juice and salt and pepper. Whizz. Refrigerate for half an hour.
